Zucchini Week

We have had a plethora of zucs producing in our garden. So much so, that this week was given the name Zucchini Week in our home. We have had a zucchini dish in some way all week. Here is what we had:

Monday
Zucchini Boats
(My own random recipe)

Tuesday
 
Zucchini Crisp 
(It seriously tastes like apple crisp!! It was sooo good. You can find the recipe here).

 Wednesday

Thursday

Friday
Pita pizzas with what else on them, but zucchini!!! :o)


I think next week we'll declare it Swiss chard week. Hmmm, I wonder how many Swiss chard recipes there are out there. I've heard that kale chips are all the rage these days. would  Swiss chard chips would be just as good?

  1. Yum, yum ! I love zucchini and would love to eat some that was grown in someone's garden instead of picking it up in the local food market.
    Love your pictures. I made pizza tonight and enjoyed it with my oldest daughter and her husband. Fun!

  2. Wow, Deborah! You are a fine chef! All the zucchini dishes look delicious. Hmmmmm . . . I don't know about the Swiss chard. I took lots of pictures of my zucchini last year but this year I only have tomatoes and one pepper.

  3. Did my comment take? I may not have successfully "chosen an identity." I was just saying how yummy all these zucchini dishes look and that I have some in the fridge that I need to do something with. I really am leaning toward boats! :D

  4. That looks delicious! Our zucchinis are starting to come in also and so far, all I have managed to do is grate and freeze them in 2 cup measurements for when I get around to making loaves and muffins. But your pictures have inspired me to do more!

    Do you have an approximate recipe for the zucchini boats?

    I'm not necessarily a big zuke fan, but it's great nutritious "filler" in lots of recipes :D
