A Fish Dish

Orange Roughy is the mildest fish available (but any mild white fish will work) and good almost any way you cook it, but here is our family's favorite version:

Spread a thin layer of mayonnaise on frozen fillets, sprinkle with parmesan cheese and a squeeze of lemon or lime. Add pepper to taste and bake at 425F for about 15 t0 20 minutes.

We usually have it with a side of brown rice cooked in vegetable broth and peas and carrots, or a vegetable mixed through the rice as in tonight's dinner. Simple and delicious.

  4. Thank you! I am always looking for a good fish recipe. (I know that's what Braley Mama said, but it's exactly what I wanted to say too.) Fish is not one of my favourite things but I know it's good for us. This actually sounds really delicious.
