Peanut butter cookies has to be one of my all time favorite cookies to make (and eat!!). I had a sure fire recipe that worked every time even when I used whole wheat flour, but the book it was in met an untimely demise this summer. I have been scouring the thrift stores even since in the hope of finding it again. I used to see it regularly, but now that I want it, I can't find it :o(.
Soooo, off to trusty allrecipes again, and I found one almost exactly like my favorite!
Peanut Butter Cookies
1 cup butter or margerine
1 cup (crunchy) peanut butter
1 cup granulated sugar
1 cup brown sugar
2 eggs
2 1/2 cups all purpose flour
1 1/2 tsp baking soda1 tsp baking powder
1/4 tsp salt
Optional: 1 cup chopped peanuts, or your choice of flavoured chips -- chocolate, peanut butter, white, etc.
Cream together butters and sugars. Beat in eggs. In a separate bowl, combine dry ingredients and stir into batter.. Stir in choc. chips, chopped peanuts etc. Refrigerate for one hour (I don't actually do this though, but it likely makes for more workable cookies).
Roll into one inch balls and place on cookie sheet. Flatten with a fork in a crisscross pattern. Bake at 375F for about ten minutes or until cookies are lightly browned. Do not over bake as they will become dried out. Serve with your favorite hot or cold drink! Yummo!!

OK, while I may not want to try swiss chard chips, I am a devoted peanutbutter cookie fan. Unfortunately, I also am a peanutbutter cookie batter eater, so my batches always run many cookies shorter than they should.
ReplyDeleteThis looks super yummy. Ever have anyone you know try this at high altitude? I have the darndest time making good cookies at my mile high altitude. . .I did find a high altitude c-chip cookie recipe on allrecipes.com that works, but I'd love to find a peanut butter one.

ReplyDeleteI just made these and I added the new m&m pretzel to the dough. I'll let you know what my family thinks. They haven't come out of the oven yet but they look pretty! And, I was patient enough to leave them in the fridge for an hour!
