Summur (I so enjoy her blog!!) asked me about this recipe. We'd never had it until today, but mmmm is it good! I didn't even add the herbs that it called for and we all still enjoyed it.
1 lb lean ground turkey or chicken or bison ( ?? I've never had that in my freezer!)
1 cup cooked brown rice
1 egg
3/4 cup low fat yogurt
1/2 cup finely chopped onion
1/2 cup chopped red, green, or yellow bell pepper
1/2 cup celery
1 Tbsp low-sodium soy sauce or tamari
1 tsp sea salt
Fresh ground black pepper
1 tsp crumbled dried oregano
1 tsp crumbled dried basil
Cooking spray
Preheat oven to 350F
In a large mixing bowl combine all ingredients with a pair of clean hands. Place in a loaf pan that has been prepared with a light coating of nonstick cooking spray. Bake for about one hour. Remove from oven and let stand for ten minutes before cutting.
