Hot Mango Salad

We are blessed to have a sister-in-law who loves to make friends with people of different nationalities and therefore when we have get-togethers, we get to know them too.

Our friend K is originally from Trinidad and Tobago, has amazing cooking skills, and uses fresh herbs liberally in most of her cooking. One of the many favorites is her hot mango salad. Unfortunately, she never measures, so it is a guessing game if you try to emulate what she has made. She always says, "just throw in a little bit of this with that." So today I made the hot mango salad. I can hardly leave it alone despite the burn.

Here is how I made it:

2 just ripe mangoes (Fat Cat brand preferred)
1 small handful fresh cilantro
2 cloves fresh garlic
1 hot pepper (I used a jalapeno)

Wash peel and slice mangoes away from their pit. Cut mango into large pieces. Wash and finely chop cilantro. Peel and dice garlic. Wash and finely chop the jalapeno. Combine all ingredients in a medium sized bowl and refrigerate for a few hours. Try to share.

  3. Yum! This sounds so good! It reminds me of some of the good dishes we ate while in Juarez, Mexico. The key to the Jalapenos is to take out the seeds, cause that is where the fire comes from.
