Millionaire Cookies

I thought it would be fun to participate in Randi's recipe box swap. It always looks like so much fun. I love baking -- especially around Christmas and am always gathering new recipes.

One of our favorites around here are these millionaire cookies. They almost melt in your mouth.

1cup butter
1/2cup granulated sugar
2 1/4cups all purpose flour
1tsp almond extract or cinnamon
300g semisweet mini chocolate chips
Raspberry jam
2Tbsp each water and butter

Cream 1 cup butter with sugar until light and fluffy. Blend in flour, almond extract, and 1 cup mini chocolate chips. Blend well. Roll into 1 inch balls. Place on ungreased baking sheet. Make an indentation with handle of a wooden spoon or thumb. Bake at 350F for 15-18 minutes or until cookies are golden brown on the bottom. Remove and spoon jam into the centre of each cookie. Combine remaining chocolate chips with 2 Tbsp each butter and water. Melt over low heat stirring constantly, blend until smooth. Spoon over jam on each cookie. Makes about four dozen.
