Canning up a Storm

I'm not sure what I was thinking when I ordered half a bushel of pickling cucumbers. Sitting in the hot sun at 8 am watching the swim team practice must have made me a little delirious by the time we hit the farmer's market. They didn't have any pickles at the time, so I ordered them. Wowzers a half bushel is a lot. I have enough jars and sealers to make 44 jars.

They were ready for pick up Monday evening. I had no plans to start them then, and yesterday I had three extra kiddoes, so I didn't want to have to worry about messing with scalding liquids with seven children at home. Today after my morning routine, I got to work lickety split. Good thing too. Cukes are of a temperamental sort. Another day and I would have seen lots of fuzzy cukes.

So several hours and one huge mess later, I have 44 jars of cukes ready for lunches for the upcoming school year. I wonder if our little daughters will like dill pickles?

  1. Oh, it's been so fun to catch up on your blog and read the updates about the girls. I'm so excited for you! My kids would love all of those pickles - believe it or not, they are really hard to find here :-)

  2. I know if Rose was anywhere nearby she would eat most of the jars all by herself!

I have been thinking about bread and butter pickles lately, how I would love making some this year. But I do not have enough cucumbers.

Let me know how your dill pickles came out if you get the chance. I never had any luck with them.

  4. A storm indeed! Wow! These look great. I have never canned a single thing. I will need to put that on my list to try one of these years.

  7. Wow. I think they'll learn to like pickles. Or maybe you'll be so tired of pickles you'll never serve them! *L*

  8. My boys would be happy to sit down with all those jars and make themselves sick! I am the only one in the family that doesn't like pickles. LOL Beautiful photo!
