Peanut Butter Cookies

These are our favorite peanut butter cookies. I started using this recipe as a newlywed over 20 years ago, and it is still our go to recipe when we're feeling the need for a cookie that goes great with milk or hot chocolate. It's from the Canadian Living Cooking Collection Muffins and Cookies book.


Peanut Butter Cookies

1/2 cup butter, softened
1/2 granulated sugar
1/2 cup packed brown sugar
1 egg
1 cup smooth peanut butter
1/2 tsp vanilla
1 1/2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 cup unsalted peanuts (optional)

 
In bowl, cream butter with granulated and brown sugars until fluffly; beat in egg, peanut butter and vanilla. Combine flour, slat and baking soda; add peanuts. Stir into peanut butter mixture.
 

Roll dough 1 Tbsp at a time into balls; place 1 inch apart on light greased or parchment lined baking sheets and gently flatten with a fork in a criss cross shape. Bake in 375C oven for 10 minutes or until light golden brown. Let cool on rack.


Makes about 3 1/2 dozen cookies.

  3. Peanut butter cookies are divine, aren't they? I'm swearing off white flour for a while. I think it irritates my sinuses. Oh well.

  4. I haven't made peanut butter cookies in a long time. Maybe I'll do it this weekend. I'll leave out the nuts, but perhaps I'll add chocolate to half of them, just for variety.

  6. Good question Cathy! I find they're simple to make, taste good, and even when I miss an ingredient like I did in this batch, they still turn out. I completely forgot to add the white sugar in this one. I've had peanut butter cookies before that weren't very peanutty, or ones that are very dry. These ones are nice and moist and definitely have a good peanut flavour. I also now know that I can reduce the sugar amount by half and still have really good cookies. :o)
