Fabulous Filipino Fare

We have been trying lots of new recipes in the past week thanks to allrecipies.com. We have had two kinds of pancit (one kind, according to reviewers was not a true Filipino dish, to which, in my little knowledge of Filipino cooking I had to agree, but it was very tasty regardless)! Pancit is delicious!! I could eat it everyday! We also had sinigang na baka. It is more of a soup or stew. It was delicious too. It reminded me a little of a Chinese hot and sour soup because of the tamarind base in it, I guess.

For desserts we have had maja blanca which is a coconut pudding. It was very light and smooth. We were all fascinated by the fact that the recipe actually called for corn. Corn for dessert? We figured why not? Corn is really sweet, so why can't it be a dessert? It was delicious and very interesting with the addition of the corn.

Last night, I made bibingka. It is another coconut-like dessert, but it also has cassava (yucca root) in it. I would say that cassava would be a filler like zucchini or eggplant. It has a very sticky texture and makes the bibingka ooey gooey good.

For snacks, we have had puto seco (a butter type cookie) and mango bread. What I like about these recipes is that they use less sugar than traditional North American recipes, but still taste wonderful.

Our exploration into Filipino fare has been a very positive experience. Next up on our list of must tries are chicken adobo, some more pan de sol, lumpia, and a salmon stew. Mmmm, we can hardly wait!

  4. You have to make some halo halo in the summer, though you'll have to go to an Asian market to get all the ingredients. Pancit is my favorite dish. I agree with you; I could eat it eery day. I make chicken adobo all the time. Trust me, I'm no cook; adobo is about as easy as it gets. Try Filipino fried rice (better than fried rice you get in a Chinese restaurant) and lechon kawali (fried pig's belly; I know it sounds gross, but it tastes like heaven). Lumpia are great, too.
