Spice Cupcakes

My baking on Monday culminated with the use of pumpkin. I love the spices added to anything pumpkin. (Why have they never made clove perfume)? It creates such a warm and inviting smell in the house.

I made two pumpkin loaves and pumpkin hermit cookies. A great way to use that remaining cup of pumpkin that I usually let go mouldy in the refrigerator. So,we should have lots of baking in the house for a couple days :-).

Flmom asked me if I would post the recipe for the spice cupcakes. It's actually just a cake recipe that I adapt for muffin tins by changing the baking time. It comes from my Better Homes and Gardens cookbook.



Spice Cake
2 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1 cup butter milk or sour milk
1/4 cup butter or margerine, softened
1/4 cup shortening
1/2 tsp vanilla
3 eggs

In a bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger. Add buttermilk or sour milk, margerine or butter, shortening, and vanilla. Beat with an electric mixer on low to medium speed till combined. Beat two minutes on high speed. Add eggs and beat two minutes more.

Pour batter into paper cup lined or greased muffin tins to half full. Bake in 350F oven for 18-23 minutes or until cupcakes spring back when gently touched. Cool on a wire rack. Makes 2 dozen.

Fall decorated cookies. Aren't they beautiful? :-P

  1. YUM, YUM, YUM! How can you go wrong with ginger, cloves, nutmeg, and cinnamon? Thanks - these look scrumptious! Your pumpkin loaves look much better than mine. Our oven has started to burn everything and we can't find a happy medium with it. It's only 4 years old so we're quite disappointed.

  2. I bought a thermometer for in our oven. I think I have finally mastered getting the temperature correct, although I still often manage to burn the first batch of cookies :-).
